2012年菜特輯-鴻運發財雞
雞肉做年菜,其實一點也不難,今年阿基師要讓媽媽端上去,婆婆就會說這媳婦娶的真是不錯喔~
所需材料:
去骨雞腿1隻、蔥、薑各50g、檸檬1顆、高麗菜絲適量
煙燻料:
白米1大匙、茶葉1大匙、紅糖1大匙、低筋麵粉5大匙
調味料:
米酒100cc、鹽2小匙
做法:
1.取一碗加入蔥中尾段、薑片、米酒、2小匙鹽抓至出水備用。
2.雞腿肉內側厚肉部分劃刀後,加進作法1碗內抓醃備用。
3.取深平鍋,將做法2雞腿肉下鍋煎香,雞皮先朝下加鍋蓋煎5分鐘至金黃後,加入做法1的蔥薑汁後再換另一面加鍋蓋煎至金黃。
4.取另一鍋,鍋底貼錫箔紙,倒入混合的煙燻料後放上蒸架,再將做法3雞腿肉放在蒸架上,加鍋蓋開大火煙燻1分半至煙變黃色即可。
5.承上,成品盤鋪上高麗菜絲,放上做法4雞腿肉切片,擠上檸檬汁,撒上檸檬屑即可。
