阿基師家常菜-沙茶羊肉

沙茶羊肉

利用冷凍火鍋羊肉片,煮出嫩而多汁的沙茶羊肉,當中的撇步相當簡單喔,今天阿基師全部教你。


所需材料:
冷凍火鍋羊肉片200g、空心菜200g、蔥段、蒜末、辣椒絲各1大匙、
醃料:
蛋1顆、玉米粉1小匙、米酒1大匙、沙茶醬1小匙、烏醋少許
調味料:
米酒1小匙、沙茶醬1大匙、醬油1大匙、烏醋少許
做法:
1.空心菜摘取嫩葉,梗與嫩葉分開備用。
2.羊肉片放入1/5全蛋液、1小匙沙茶醬、少許烏醋、1小匙玉米粉、1大匙米酒、1小匙油拌勻醃漬備用。
3.取一碗,加入1小匙米酒、1小匙水、1大匙醬油、1大匙沙茶醬、少許烏醋備用。
4.取深炒鍋,加入作法2羊肉炒至變白取出備用。
5.同上鍋,下空心菜梗、蒜頭、蔥、辣椒拌炒生香,下空心菜葉、適量水拌炒後,加入作法4、作法3拌炒均勻即可。
