阿基師家常菜-炒烏龍麵
所需材料:
馬友鹹魚100g、雞柳肉100g、烏龍麵300g、韭黃75g、蒜苗、芹菜50g、高湯1碗
調味料:
鹽適量、1匙香油、1匙米酒
做法:
1.韭黃切末、蒜苗、芹菜切段。
2.取深炒鍋,下1匙沙拉油煎熟鹹魚後,取出剔除魚骨,取下魚肉備用。
3.將雞胸肉順紋切條狀,加水、少許鹹魚、油抓醃入味備用。
4.同作法2鍋,下蒜苗、芹菜炒勻,加入2大匙熱水、3大匙高湯煮勻蒜苗、芹菜。
5.取水鍋,下烏龍麵、鹽水滾一分鐘入味。
6.承作法4,下適量鹹魚、作法5炒勻後,放入做法3燜煮收汁,加入米酒、香油調味,起鍋前灑上韭黃末即可。
