三步驟作點心 比利時皇家經典巧克力

世界第一的比利時巧克力,飄洋過海來到台灣,被藝人黃湘怡做成經
典蛋糕後,馬上在演藝圈造成一股旋風,尤其是宋新妮更是愛到讚不
絕口,即使小小6吋價格卻高達1000元,但那香醇濃卻又不膩的巧克
力香,仍讓許多人趨之若鶩;在世界頂級巧克力食材的威脅下,淇淇
老師要如何用三步驟,就能做出媲美甚至更高檔的巧克力經典蛋糕
呢?這將是她面臨最艱鉅的挑戰…
材料(六吋):
蛋3個
砂糖20g+30g
沙拉油25g
牛奶40g
低筋麵粉55g
可可粉10g
泡打粉1/2小匙
白醋1/4小匙
<巧克力甘那許>
牛奶巧克力210g
液狀鮮奶油90g
草莓乳酪餡(銅鑼燒教過的) 適量
巧克力餅乾 適量
步驟一 製作巧克力蛋糕
準備兩空碗,將蛋黃蛋白分開,蛋黃加糖20g,沙拉油,牛奶,麵粉,可可粉,泡打粉拌勻
另一碗放蛋白+糖30g+白醋
接著用攪拌器打約1分鐘至白色硬發泡狀
最後將麵糊放入烤模中以180度c烤20分鐘
步驟二 巧克力甘那許
將鮮奶油隔水加熱,放入切碎牛奶巧克力拌融
步驟三 合體
冷卻蛋糕橫切三片

秘密武器是白醋4分之1小匙
巧克力麵糊作法:
1.蛋黃加入砂糖拌均,在加入沙拉油.低筋麵粉.可可粉.泡打粉拌均
2.打蛋白加入砂糖.白醋(可使發泡加速)打發變硬(約要打1分鐘)
3.將巧克力麵糊加入一些打發的蛋白拌均,再將巧克力麵糊倒入打發的蛋白中拌均
4.將麵糊倒入模型中,在以烤箱180度烤20分鐘
巧克力醬作法:
1.將巧克力碎片加入鮮奶油,再以隔水加熱溶化
組合蛋糕作法:
先將烤好放涼的巧克力海綿體切成3層
第一層:將海棉先塗上一層楓糖漿再抹上一層草莓奶酪
第二層:將海棉先塗上一層楓糖漿再淋上一層巧克力醬
第三層:直接淋上剩下的巧克力醬再做裝飾即可

看起來真ㄉ超級『好吃』ㄉ
我做的巧克力蛋糕失敗了.剛開始以為成功.因為有膨脹.從烤箱拿出來好高興.等忙完家事準備切成三片才發現拿不下來.用小刀處理許久才把蛋糕取下.發現下層硬硬的中間沒熟.哇 失敗兩字寫在臉上.沒關係再接再厲相信總有一天一定可以成功做出蛋糕.不用再靠蛋糕粉.加油.加油.淇淇老師的秘密武器醋.實在太神奇了.很快把蛋白打發.只可惜我沒成功.

請問我家的烤模是8吋的可以不加份量直接烤嗎
如果要加份量的話是要再加多少呢
