山西麵
到山西吃麵,有四大守則~

1.千萬別問是不是手工麵,會被賞白眼!

山西是麵的故鄉,家家戶戶都會做麵,而且大到餐廳小到路邊攤,誰敢不是現點現做,肯定不是店招牌被拆了,就是攤位被砸了!

2.千萬別在山西人面前說做麵的方式其實差不多..

山西人從2000年前開始做麵,他們對一碗麵的堅持,從麵粉粗細的選用、麵團比例的黏稠度、發酵時間的錙銖必較、麵條寬瘦的零誤差、做麵工具的吹毛求疵….所以千萬別在山西人面前說做麵的方式其實差不多,他的費心解釋會讓你聽到麵都冷了,頭腦都糊塗了!

3.千萬要記清楚麵條的名字,差一個字,老闆真沒辦法幫你點菜!

山西麵食有200多種,剃尖、擦尖、抿尖、溜尖、刀撥、刀削、刀勾….每一種麵外型和口感都不相同,你到底要吃哪一種麵?上館子前記得 先搞清楚名字。

4.千萬別問店員有沒有湯麵,因為山西人的強項是乾麵!

位在黃土高原上的山西,自古農作物專產粗糧(蕎麥 小麥 高粱等),所以山西人一直以來以麵食為主。而山西的地理位置又因為是重要的軍事重地,因此山西人做麵講究 整齊、清潔、簡單、樸素、迅速、確實。而湯麵這種需要小火慢熬的湯頭做法,不適合常要作戰的山西人,所以簡潔有力又快速的乾麵,才是山西人的強項!

    第一个问题,其实有更为正宗和地道的面皮可吃哦。(当然如果你们不提发源地陕西的话)在桃园二巷。
    第二个问题:正宗的腌韭菜其实要放一些辣椒和山西熏醋,清河园的那种只能算是药引子吧。
    第三个问题:说起面食,建议詹姆士和乔乔下次去到山西隔壁的陕西吃吃看看,会有惊人的大发现哦!那里的面食,其实比山西还要多哦。
    第四个问题:建议往西,一路往西。现在也是适合的季节。甘肃,青海,宁夏,新疆。个个遍地美食。

    所謂灌腸其實就是蕎麵蒸制的,所以當然是看不到腸子啦(文中下面那張圖中的第二個小圖應該就是灌腸吧)
