山西麵
到山西吃麵，有四大守則~

1.千萬別問是不是手工麵，會被賞白眼！

山西是麵的故鄉，家家戶戶都會做麵，而且大到餐廳小到路邊攤，誰敢不是現點現做，肯定不是店招牌被拆了，就是攤位被砸了！

2.千萬別在山西人面前說做麵的方式其實差不多..

山西人從2000年前開始做麵，他們對一碗麵的堅持，從麵粉粗細的選用、麵團比例的黏稠度、發酵時間的錙銖必較、麵條寬瘦的零誤差、做麵工具的吹毛求疵….所以千萬別在山西人面前說做麵的方式其實差不多，他的費心解釋會讓你聽到麵都冷了，頭腦都糊塗了！

3.千萬要記清楚麵條的名字，差一個字，老闆真沒辦法幫你點菜！

山西麵食有200多種，剃尖、擦尖、抿尖、溜尖、刀撥、刀削、刀勾….每一種麵外型和口感都不相同，你到底要吃哪一種麵？上館子前記得 先搞清楚名字。

4.千萬別問店員有沒有湯麵，因為山西人的強項是乾麵！

位在黃土高原上的山西，自古農作物專產粗糧(蕎麥 小麥 高粱等)，所以山西人一直以來以麵食為主。而山西的地理位置又因為是重要的軍事重地，因此山西人做麵講究 整齊、清潔、簡單、樸素、迅速、確實。而湯麵這種需要小火慢熬的湯頭做法，不適合常要作戰的山西人，所以簡潔有力又快速的乾麵，才是山西人的強項！

    第一个问题，其实有更为正宗和地道的面皮可吃哦。（当然如果你们不提发源地陕西的话）在桃园二巷。
    第二个问题：正宗的腌韭菜其实要放一些辣椒和山西熏醋，清河园的那种只能算是药引子吧。
    第三个问题：说起面食，建议詹姆士和乔乔下次去到山西隔壁的陕西吃吃看看，会有惊人的大发现哦！那里的面食，其实比山西还要多哦。
    第四个问题：建议往西，一路往西。现在也是适合的季节。甘肃，青海，宁夏，新疆。个个遍地美食。

    麵食我也很喜歡呢~
    所謂灌腸其實就是蕎麵蒸制的，所以當然是看不到腸子啦（文中下面那張圖中的第二個小圖應該就是灌腸吧）
