請問阿宏師如何使雞胸絞肉滑嫩好吃？

雞胸絞肉要先調味 加少許的太白粉和雞蛋和沙拉油
這樣醃製後再炒 會較滑嫩
身子骨還算硬朗
只是少了群 可以開玩笑的好對象
生活變的好無趣ㄡ 唉!!!

有個問題要請教阿宏師..
這是我們的配方..(作的是黑糖糕)
在來粉150g、低粉150g、蓬萊粉120g、蒟蒻粉30g、太白粉30g、香草粉8g、水680CC、酵母粉12g
泡打粉15g、來姆酒10CC、蜂蜜20g、蜜核桃80g、黑糖150g、沙拉油30CC
作法：
1.將680CC水的2/3 452CC跟紅糖煮成糖水放涼
2.再來粉、逢來粉、低粉、太白粉、蒟蒻粉、香草粉混合均勻過篩加入放涼的糖水 中再加酵母粉、萊姆酒、蜂蜜拌勻醒置約15分鐘
3.模型內鋪蒸烤紙待用
4.另1/3的水加入剛剛醒好的粉漿裡再加沙拉油、泡打粉再拌勻到入模型內灑上密核桃
5.大火蒸35~40分，稍涼即可切食
