思婷與阿華師都說讚的鹹粥，作法你不能不知道……

< 鹹粥 >

 

    Step1 → 大骨湯

◎ 材料：

1.        龍骨

2.        雞骨

3.        水

4.        薑

5.        蔥

6.        柴魚粉

7.        鹽

8.        砂糖

◎ 做法：

1.        龍骨、雞骨洗淨，過水川燙

2.        龍骨、雞骨、蔥、薑加入水中

3.        熬煮1個半小時

4.        將骨頭及雜質過濾

5.        加入材料6~8調勻即可

 

     Step2 → 鹹粥

◎ 材料：

1.        半成品大骨湯

2.        白飯

3.        高麗菜絲

4.        芋頭

5.        香菇絲

6.        蝦皮

 

◎ 做法：

1.        米洗淨，放入電鍋中蒸熟 (水和米1:0.9)

2.        蒸熟的米用清水沖洗掉表面澱粉質後，瀝乾備用

3.        高麗菜切條；芋頭切小丁，下油鍋半煎炸(油溫170~180度)至半金黃即可

4.        起油鍋，炒香香菇絲(泡水)、蝦皮

5.        加入高麗菜絲拌炒

6.        加入半成品高湯、芋頭丁煮至滾

7.        再加入白飯用小火熬煮即可

 

 

 < 紅糟肉 >

     Step1 → 醃肉

◎ 材料：

1.        三層肉

2.        梅花肉

3.        福州紅糟

4.        清醬油

5.        鹽

6.        砂糖

7.        蒜末

8.        米酒

9.        五香粉

10.     甘草粉

◎ 做法：

  1. 福州紅糟加入材料3~10拌勻
  2. 三層肉和梅花肉加入1料
  3. 加以搓揉鬆軟肉質
  4. 放入冰箱中醃一天即可使用(至少8小時)

     Step2 → 紅糟肉

◎ 材料：

1.        半成品醃肉

2.        粗地瓜粉

◎ 做法：

1.        半成品醃肉裹上粗地瓜粉

2.        下油鍋，以半浸泡方式泡熟

3.        客點單再回鍋逼油搶酥

4.        起鍋後切小片上桌

 

 

 

< 雞捲 >

◎ 材料：

1.        後腿肉粗絞

2.        肥油粗絞

3.        魚漿

4.        鹽

5.        五香粉

6.        砂糖

7.        米酒

8.        洋蔥丁

9.        紅蘿蔔絲

10.     芹菜末

11.     豆皮

◎ 做法：

1.   材料1~12攪勻

2.  豆皮使用前先切3等份(三角型)

3.  取2張重疊，包入餡料

4.  用牙籤在表面戳洞

5.  下油鍋，以半浸泡方式泡熟

 

                                                    6.   客點單再回鍋逼油搶酥

                                                    7.    起鍋後切小片上桌
